If you follow my food Instagram, you would know how much I love avocado toast for breakfast… and have called myself an avocado toast connoisseur just from trying them at various different cafes. But honestly my favorite iteration would probably be the homemade one… and today I happened to find an avocado in our fridge. Here is my simple recipe —
Ingredients
1 medium haas avocado, ripe
2 pieces of the bread of your choice
1/4 teaspoon sea salt
1/4 teaspoon ground pepper
1/2 tablespoon lemon juice
S&B Shichimi Togarashi / Japanese red chili mix
S&B La-yu Chili Oil
It’s incredibly simple to make.. and I usually use whatever I can find on hand in my kitchen. To make the avocado spread, scoop avocado chunks into a bowl, mash into a paste consistency. Add lemon juice, sea salt and ground pepper… mix gently. Toast the bread of your choice… right now I only had your good ol’ sliced bread. Spread your avocado mixture evenly into the toast, sprinkle some shichimi togarashi and drizzle lightly with chili oil.
It is ridiculously yummy with the creaminess from the avocado, the light sourness from the lemon with a slight spicy punch from the chili oil.
This is perfectly good as breakfast or a midday snack too.
